This is one of our favourites and its one that we have at least twice a week using various combinations of vegetables.
A good starter recipe is,
1 Aubergine
1 Onion
1Courgette
1 Pepper
1 Tin of tomatoes (drained)
A large handful of basil, a little extra virgin olive oil and salt/pepper
Slice vegetables and add to a pan with the oil (tea spoon)when these are cooked add the tin tomatoes and continue cooking until its all nicely heated up.
You can serve this hot or cold but my favourite is hot with a good lump of Welsh goats cheese on the top.
